Venice’s Frittelle and Galani: A Taste to Discover While Sailing!

Here’s how to prepare these delicacies at home, for a taste of Carnival whenever you feel like it!

Frittelle Veneziane

Frittelle are a bit of a symbol of Venice Carnival: fluffy, warm and irresistible, perfect for a sweet break!

Ingredients:

  • 500 g flour
  • 150 g sugar
  • 2 eggs
  • 50 g butter
  • 100 ml milk
  • 25 g brewer’s yeast
  • 100 g raisins (if you like)
  • A pinch of salt
  • Icing sugar for garnish
  • Oil for frying

Preparation:

Start by dissolving the brewer’s yeast in a little warm milk and let it stand for a few minutes.
In a large bowl, mix the flour, sugar, and salt. Add the dissolved yeast, eggs, melted butter, and remaining milk. Mix everything together until you have a soft mixture.
Cover the bowl with a tea towel and let rise for about an hour, until the dough doubles in volume.
When ready, add raisins, if you like, and form balls with the dough.
Heat oil in a frying pan and fry the pancakes until golden brown. Drain them on paper towels and sprinkle with powdered sugar.

Venetian Galani

And then there are galani, also called “chiacchiere.” They are crispy, light, and perfect for eating with friends. The recipe is super simple:

Ingredients:

  • 250 g flour
  • 50 g sugar
  • 2 eggs
  • 30 g butter
  • 1 small glass of grappa (optional, but fits!)
  • A pinch of salt
  • Oil for frying
  • Powdered sugar for garnish

Preparation:

Start by mixing the flour, sugar and salt. Then add the eggs, soft butter and schnapps (if you like a little extra flavor).
Mix everything together until you get a smooth mixture. If necessary, add a little flour.
Let the dough rest for 30 minutes and then roll it out very thin with a rolling pin.
Cut the dough into strips or shapes as desired and fry the galani in hot oil until golden and crisp.
Drain them on paper towels and sprinkle with powdered sugar.
